Review of New Vegetarian Dishes

BOWDICH, Mrs. NEW VEGETARIAN DISHES. With Preface by Ernest Bell. London: George Bell & Sons, 1892.
This book uses Dairy and Egg.

Many of the recipes in this book are simple and look very tasty. The kind of stuff I would make at home. Nearly all of the recipes can be made now, there are few strange hard to get a hold of ingredients with the exception of sago.

Ingredients:
Extensive use of Haricot Beans - research history of
The book begins with a description of Haricot Beans and their usefulness in cooking. They are used in many of the recipes, I would guess at first read through at least a quarter. Here in the US I haven't heard of Haricot Beans but through some research I found out that they are similar to navy beans or small white beans.

Lentils
The second part of the book goes into lentils and their benefits. Lentils are still readily available.

Sago (note to self Research history of)
Used as a thickener. Along with more typical ingreidents like tapioca, semolina or flour.

Vermicelli
Prevalent use of Vermicelli research history of and use in US cooking/English Cooking
I was surprised to see how often Vermicelli is used in this book. Its in a great number of recipes. There is no other pasta product other than semolina listed.


Rice is used but not often.

Desserts
Vienna Flour is used in the puff paste recipe.
One cake is listed.

Crowell & Co, NY, 169 pp. In very good used condition for its age, it does some some wear to the edges especially the corners, no foxing anywhere, a few spots here and there on some page, a water stain on the bottom edge that run from page 113 to the last page. Gilt top page edges, spine & front cover lettering. I saw one dogeared page but it was at the bottom edge and a few top edge.

A Vegetarian cook Book. It is not so much an argument for that food system as a practical plan for its observance -- devoting most of is space to recipes & suggestions. Simple directions for salads, luncheon dishes and desserts and other toothsome dishes make the book of value to every housekeeper -- irrespective of her "food creed"

The Boston Cooking School Cook Book, by Fannie Merritt Farmer, Little, Brown and Company, Boston, New Edition, Revised and Enlarged, 1925. Hard cover, 5-5/8" x 8-3/8", 838 pages. Black and white photos scattered throughout. Many vintage advertisements at the back. To quote from Antique Trader Collectible Cookbooks, this cookbook, first written in 1896, was "oft credited as one of the first to standardize recipe measurements and discuss troubleshooting. Her uniform measures made recipe results more reliable, and the shrewd Fannie had included trend-driven recipes that attracted upper-class hostesses to its pages." The cookbook and subsequent editions claimed over 3 million copies sold by the mid-1950s.The outside cover on this copy is in very good condition with some shelf wear around the edges. The owners name is handwritten on the inside front cover, and there is a recipe for Potato Salad written on the inside back cover. Looks like the owner used some fabric tape to stabilize the spine on the inside covers. There are a couple spills inside, but I could find no other writing.
